n : a value similar to a Reichert value that indicates the content in butter or other fat of the volatile water-insoluble acids (as capric acid and lauric acid) - called also Polenske number Polenske, Eduard (fl 1889-1912), German chemist. Polenske introduced a method for the detection of coconut oil in butter and lard in an article published in 1911. He developed his method after examining 34 fresh and eight old butters.
